- 4 fillets basa (or your favorite fish)
- 1/2 cup shredded cheese
- 1 jar Cookwell & Company Veracruz Two-Step Mix  
- 1 Tub potato salad
- Lay fish in large skillet and pour Veracruz over fish.
- Simmer 10min or until fish flakes easily with fork.
- Top with cheese
- Serve with potato salad as side
